The Merlot Expression

NV Grape Blend - Merlot showcases the bold, dark fruit character of this noble grape variety, masterfully integrated with wild spontaneous fermentation.

Pure Merlot Character

Using 100% Merlot grapes, we capture the varietal's signature dark fruit profile. The grapes contribute rich blackberry and dark fruit notes that complement wild fermentation's complexity.

Multi-Stage Aging

Our three-part aging strategy combines 25% 12-month aged beer for freshness, 25% 24-month aged for developing complexity, and 50% 36+ month aged for depth and tannin integration.

Dark Fruit Symphony

The final blend expresses Merlot's natural aromatics—blackberry and dark fruits—enhanced by spontaneous fermentation's wild character and extended barrel-aging's depth.

The Aging Profile

A carefully balanced composition of aging periods creates the perfect harmony between freshness and complexity.
