Non Vintage Blend represents the pinnacle of our spontaneous fermentation program—a carefully curated expression of time, place, and patience.

Nocturnal Inoculation

On cold winter nights, wort cools in our open coolship, capturing wild yeast and bacteria native to the Wairarapa valley. This is where each batch's unique character begins.

Oak Barrel Aging

Transferred to neutral French oak barrels, the beer matures for 12-36 months. Each barrel develops distinct characteristics—some bright and acidic, others funky and complex.

Master Blending

Our brewer selects and blends barrels to achieve perfect balance. This art form combines young beer's vibrancy with aged beer's depth, creating something greater than the sum of its parts.

Appearance

Color: Hazy golden straw with amber highlights

Tertiary: Subtle barnyard funk, dried apricot
